Aahhh, there’s nothing like the coalescence of peanut butter and chocolate.
It’s a match and marriage made in heaven.
I can’t decide if I’m the peanut butter or the chocolate in my relationship – I’m thinking I’m the gooey, sticky, sometimes slimy, and often sweet nut butter and Brian is the sweet chocolate goodness – and we are held together by love and joy?

Anyway, I was simply playing around in the kitchen (that’s where all the trouble always starts, right?) with my Vegan Chocolate Chip Buckeyes no-bake cookie recipe and came up with basically the same thing – but, instead of chocolate chips, this recipe uses cocoa powder. Just as good – if not great!
(Ummmm…yes. Of course it’s great. It’s peanut butter and chocolate – aka, “Mr. and Mrs. Awesome!)
Vegan Gluten-Free Chocolate Peanut Butter Balls
1 1/2 cups smooth and creamy peanut butter
1 cup vegan butter, room temperature
1/2 tsp. vanilla extract
4 cups powdered sugar
1 cup unsweetened cocoa powder
2 Tbs. vegan, plant-based milk
Combine the peanut butter, vegan butter, and vanilla in a large bowl with a mixer and beat until fluffy.
Mix in the powdered sugar, just a little at a time, until well incorporated. Add the unsweetened cocoa powder and drizzle in the nut milk until the texture is that of cookie dough.
Chill for 30 minutes.
Roll into balls and place on a parchment lined pan and chill again for several hours.
