In any case, rather than something sweet for my yoga family, I decided on savory: Vegan Gluten-Free Toasted Almond Cranberry “Cheese” Bites!
Serve them with crackers, nosh on them on their own, OR enjoy with a great big glass of elegant wine!
Vegan Gluten-Free Toasted Almond Cranberry “Cheese” Bites
8 oz. vegan cream cheese
8 oz. vegan shredded mozzarella
1/2 cup roasted (salted) almonds
1/2 cup dried cranberries
Pulse the almonds in a food processor until broken into medium pieces. Add the cheeses and cranberries and pulse again until smooth.
Form into bite-sized balls and chill on a parchment lined cookie sheet for at least 4 hours.
