They really are like heavenly little clouds on the palate.

Yes, you did die and and go to heaven with one sweet orb. You’re floating on clouds.

And, with the popularity of all these gluten-free, no-bake bites among friends, I have a feeling there’s no stopping me now – look out – more flavor bombs to come!

Vegan Lemon Cashew Cloud Bites

1 1/2 cups cashew butter (Artisana is my very favorite)
1/2 cup vegan butter, room temperature
1/2 tsp. vanilla extract
4 cups powdered sugar

juice and zest of 1 fresh lemon

Combine the cashew butter, vegan butter, and vanilla in a large bowl with a mixer and beat until fluffy.
Mix in the powdered sugar, just a little at a time, until well incorporated. Add the lemon juice and zest.
Chill for 30 minutes.
Roll or scoop into balls and place on a parchment lined pan and chill again for several hours. (Freezing is really good too!)
