We had another afternoon together, Valerie and I.
For a while we sat and talked, and giggled, and thought about what we could do.

We decided on cookies.

Really, really good cookies.

“Ugh, I hate how good these cookies are,” was the feedback.

I’m quite pleased.

White Chocolate Macadamia Nut Cookies

3 cups all purpose flour
1 tsp. salt
1/2 tsp. baking soda

2 eggs
1 1/2 cup sugar
1 cup brown sugar
1 1/2 tsp. vanilla extract
8 oz. white chocolate chips
4 oz. sweetened dried cranberries
4 oz. roasted macadamia nuts

Preheat the oven to 350 degrees. Whisk together the flour, salt, and baking soda in a medium bowl. In another bowl, cream together the eggs, sugars, and vanilla. Fold in the white chocolate, cranberries, and nuts. Gradually fold in the flour mixture until fully incorporated. Bake on a parchment lined cookie sheet for about  14 minutes. Cool for 3-5 minutes and transfer to a cooling rack to set completely before noshing.
