Chocolate Peanut Butter Balls (Buckeyes) are my absolute FAVORITE dessert for the holidays – and most likely anytime too.
I can’t resist the marriage of peanut butter and chocolate (even though I’m not much of a chocolate fan on its own) on any occasion. It may be my ultimate weakness.
But peanut butter (almond butter, coconut butter, any NUT butter) without chocolate, runs a close second. I’ll do it any day, in every way.
That’s why THESE Wild Blueberry White Chocolate Peanut Butter Balls are so incredible. We have the magic of peanut butter balls (sweet and creamy) mixed with sweet and caramelized white chocolate flavor, and aromatic dried wild blueberries.
I’ve been having these babies for breakfast the last few days. I can’t get enough!
No bake. No mess. No fuss.
All the goodness. Nothing else.
Wild Blueberry White Chocolate Peanut Butter Balls
Wild Blueberry White Chocolate Peanut Butter Balls
1 cup White Chocolatey Wonderful Peanut Butter
1/2 cup butter, softened (1 stick)
2 cups powdered sugar
2 cups white chocolate chips
1 1/2 cup dried wild blueberries
Mix the peanut butter and softened butter together in a mixing bowl, using a stand mixer or high-speed hand-held mixer. Gradually stir in powdered sugar until fully combined. Fold in the white chocolate chips and wild blueberries. Cover and place in the fridge for about 15 minutes to firm up.
Using your hands, shape the dough into 1-inch balls. Place the balls on a baking sheet, cover and refrigerate for at least 20 minutes.
That’s it! Store in the fridge, for best results.
