Za’atar is a generic name for a family of related Middle Eastern herbs. The name za’atar alone is usually the name for a culinary condiment made from dried hyssop leaves, mixed with sesame seeds, sumac, and often salt, as well as other herbs and spices.
It’s really quite incredible.
And, when paired with fresh dill and heirloom tomatoes to create aromatic and fragrantly delicious chicken burger patties, you’ll find yourself in Middle Eastern heaven.
Za’atar Chicken Dill Patties
1/2 lb. boneless, skinless, ground chicken
1 large egg
1/4 cup breadcrumbs, divided
1 Tbs. spicy mayo
sea salt and pepper
1 Tbs. Za’atar, divided
1 Tbs. fresh dill weed
1 large heirloom tomato, sliced
white rice, cooked
Preheat the oven to 425 degrees.
Combine the ground chicken, egg, 2 Tbs. breadcrumbs, mayo, sea salt and pepper, and 2 tsp. Za’atar. Mush together well and form into two patties.
Sprinkle the remaining breadcrumbs on parchment paper and toss both patties in the crumbs, thoroughly coating both sides.
Bake, on parchment paper, for about 30 minutes, until cooked through.
Serve over stacks of white rice, topped with additional Za’atar, sliced tomatoes, and fresh dill.
